
Protein, Fiber, healthy Fat, low sugar and a whole lot of crunchy deliciousness. Grab a bowl, a few ingredients and make yourself a batch today. Recipe makes 10 cookies.
1 cup whole, rolled oats
1 1/2 cups protein vanilla protein powder
4 TB butter, softened
6 TB creamy peanut butter (or almond butter)
1 large egg
1 tsp baking soda
1/8 tsp salt
1 tsp ground cinnamon
1/4 cup granulated or brown sugar
1/4 cup chopped walnuts
Mix all ingredients together by hand in a large bowl. Roll out into 10 balls. Place on a cookie sheet lined with parchment paper or a silicone baking sheet. Press down each dough ball with your fingers. Bake at 350 degrees for 10 – 12 minutes. Check the cookies after 10 minutes of baking. Press down on each cookie with a spatula to flatten. Bake an additional 1 – 2 minutes, if needed, to obtain your desired level of crispness. Remember! The cookies will continue to bake to a certain extent after removing them from the oven. Let cool. Place in a covered container or place them in a freezer bag and store them in the freezer.
