Pumpkin Protein Breakfast Cookie

Grab a bowl, spoon and your ingredients. Soon you will be baking a single, delicious pumpkin breakfast cookie. A couple minutes to mix, 10 minutes to bake at 350F in a convection oven/air fryer then you will be savoring a breakfast cookie that you can feel good about eating.

1/3 cup oats (rolled or quick; no instant)

1 scoop vanilla protein powder

1 tsp pumpkin pie spice (more if you are spicy!)

1 – 2 TB maple syrup or honey

3 TB pumpkin puree

Mix all ingredients together in a small bowl. Dough will be sticky. Put batter on a piece of parchment paper or a small oven-safe plate that you’ve lightly sprayed with cooking spray. Shape it into a round cookie shape – do not flatten / make it thin. Bake at 350F in your air fryer (mini convection oven) for 10 minutes. Check for doneness. Ovens vary. Don’t overbake.

Remove from oven. Let cool until your desired level of warmth. I recommend eating it with a fork to savor every bite. You can eat it plain, or I highly recommend adding a dollop of Sweet Protein Icing
